🍕 Keto Cauliflower Calzones 🤤 Comment below 👇 Tag your friends 😋 INGREDIENTS: -1 large head cauliflower, cut into florets -2 eggs -1/4 c. finely grated Parmesan -1 clove garlic, minced -2 c. shredded mozzarella, divided -kosher salt -Freshly ground black pepper -1/2 c. pizza sauce -1/2 c. pepperoni -1 tbsp. finely sliced basil DIRECTIONS: * Preheat oven to 425º and line a baking sheet with parchment. On a box grater or in a food processor, grate cauliflower and transfer to a large bowl. Microwave on high, 8 minutes. Drain thoroughly with paper towels or a cheesecloth until mixture is dry. * Add egg, ½ cup mozzarella, Parmesan and garlic powder to cauliflower bowl and season with salt and pepper. Mix until combined. * Form cauliflower into circle shapes on prepared baking sheet and bake until golden, 15 to 20 minutes. * Spread pizza sauce over half of each round. Sprinkle with mozzarella and top with pepperoni and basil. Fold the cauliflower in half to cover the cheese and pepperoni.
