This side dish of roasted red potatoes with thyme is easy to make and tastes great with any meal. The flavors of the olive oil, garlic, and thyme work well together, and roasting the potatoes brings out their natural sweetness.
Ingredients: 1 lb red potatoes, washed and quartered. 2 tbsp olive oil. 2 cloves garlic, minced. 1 tsp dried thyme. Salt and pepper to taste.
Instructions: Turn on the oven and heat it up to 400F 200C. Put the cut red potatoes in a large bowl and add the olive oil, minced garlic, dried thyme, salt, and pepper. Toss the potatoes so that they are evenly covered. Place the potatoes on a baking sheet that has been lined with aluminum foil or parchment paper. Spread them out in a single layer. Put the potatoes in an oven that has already been heated up. Roast them for 25 to 30 minutes, or until the outside is golden brown and crispy and the inside is soft. Stir them once halfway through cooking. If you want, you can serve it hot with fresh thyme leaves on top.
