After a fine night of dining and craft beer drinking we needed a peaceful morning for breakfast and contemplation. Hence, we arrived at the beautiful @roblezacocina at @vinosliceaga . Happy Monday! The much promised lunch post about one of the finest additions to the Todos Santos culinary scene is here! After a dinner that greatly surpassed expectations, we couldn’t wait to come back to the magical @tregallinets . We gathered some hungry friend and anxiously drove to what would be a deeply satisfying gastronomic experience. After making our way through the narrow streets of this small town and finding nearby parking (lucky), we walked towards the giant bugambilia that shades the restaurant’s entrance. We were delighted to see Chef Constantino was present, he made sure we were taken care of. Lunch began with a classic beef carpaccio. Brilliant, of course. My compadre @garnachef eagerly awaited their exceptional Reuben sandwich. Sliced and shared amongst friends. I ordered my favorite pasta, the three meat ragú maccheroni. Sublime. Tomato umami goodness. The tagliolini with zucchini and truffle oil is now a classic. My wife @glo_lozno had a diabolically delicious special request for the kitchen. A mixed plate of tortellini: half beef with a balsamic reduction, half spinach and sage. Very much yum. We finally arrive, dear reader, to the reason you even read this post. What is that delicious looking cover you’re probably asking yourself. That is the result of the exquisite salt crusted Rib Eye cut table side by Chef Constantino. I cannot express how much we enjoyed this perfectly cooked fine piece of beef with some added veggies. Three Michelin stars means it’s worth visiting the country just to visit that particular restaurant. I can’t give out stars but I’ll give it three Choyas (indigenous cactus). The last birria taco that blew me away is located across from Los Pinos park in Todos Santos. Remember the name: Birriería El Dátil. The amount of people swarming the humble food cart will give you a good clue as to how good these beef birria tacos are. I still have flashbacks of a deeply satisfying first bite. Last weekend was the re-opening of @briqueta.ts by our good friend @arthur_rivero in an awesome new location closer to the center of town. We walked about a block from our Airbnb and came upon a colorful and inviting entrance that gave way to a very large open space. I definitely see weddings here in the future! After a few minutes taking in the space we noticed Arturo behind a beautiful new open kitchen built by him. We found a table and after some drinks came the hearty dishes we’ve come to love from Briqueta. What we had: Cover photo: Smoked Short Rib with black mole 🤤. Always a triumph! Then came the Pork Belly Gordita with fresh slices of fish on top of a tomato tatemado sauce. Good heaven! The one two punch came with the Beef Tail and Bone Marrow Gordita with fresh scallop slices served on top of a cricket sauce. In order to avoid feeling too guilty we enjoyed a delightful tomato salad served with burrata and arugula on top of a beetroot and raspberry reduction. Delish! Finally! Proper CDMX style garnacha in San José del Cabo! Driving around with my compadre @garnachef in Chamizal finding somewhere to eat, this joint caught our hungry eyes. The promise was bold and tempting, we gave in and rejoiced. The menu popped with classic CDMX garnacha: Pambazos, Tlacoyos, Huaraches, sopes, tortas, gorditas and the mythical… “Machete”. The huarache with bistec was my choice, a very generous hand made thick corn tortilla mixed with refined beans. Topped with carne asada style beef, greens and salsa. My compadre tried the Torta Cubana! Not for the faint of heart or weak of stomach. A hearty amount of breaded beef, cheese, and avocado that will send you to sleep faster than an Ambien. Then came the mighty “Machete”. An absurdly large corn tortilla you can fill up with up to four ingredients! We tried the shredded beef, chicken tinga, chicharrón prensado, requesón, pumpkin blossoms and huitlacoche. It was as delicious as it was insane! Ensenada is the land of breweries, hence I try to visit a different one each time I’m there. We ended up at the award winning @cerveceriatranspeninsular . A large relaxed space with a open terrace overlooking the marina. We couldn’t decide on which beer to try so I asked for a sampler of their 18 different brews! Stouts, black ales, IPAs, lagers, it was quite an assortment and I enjoyed all of them! Although, as a hops fiend, my favorites were definitely the IPAs. All that beer opens up an appetite, but we were having dinner later nearby so we “only” ordered a plate of beef nachos 🤣. Totally worth it! I lived in Guadalajara for 8 years and had the privilege of tasting many, many tortas ahogadas. It’s one of my favorite breakfast dishes. However, and anyone from Jalisco currently living outside their state will understand, it’s almost impossible to get a real torta ahogada anywhere else. The main problem is the bread, the authentic “birote salado”. A salted hardened loaf of bread made specifically to maintain its integrity as it is completely drenched in a wonderful sauce made from tomatoes, diced onion, cumin, cloves, oregano and garlic. The only place that can make this bread is Jalisco, mainly because of the water. Hence, “El Güero” owner and operator of @tortas_ahogadas_guadalajara , has the bread brought in fresh from Guadalajara! He makes his own pork carnitas and the sauce is on point. From the very first bite I was sent back in time, this is the taste of my high school and college years. Shrimp Aguachile “Don Chuy” served with Tostitos at @cuarenta.seafood is one of my favorite seafood dishes in Los Cabos. This post has been a long time coming and I’m very happy to showcase one of my go to joints to satisfy my spicy seafood craving… or cure me of a mean hangover. Owned and run by Toño @antoniolc7 , he’s carved himself a delicious piece of San Jose’s culinary offerings. His micheladas will carry yesterday’s woes away in a savory splash of life giving flavor. As the saying goes: “Happy wife, happy life”. Hence, our pursuit of happiness consistently brings us back to this bowl of spicy shrimp goodness. Mind you, not for the faint of heart, or stomach. However, you can ask for the kitchen to hold back a bit on the spice. The product is excellent, the special clams are a must! Just a couple of seafood mountains waiting to be conquered. Their sashimi and ceviches bring a fresh relief from the red hot Don Chuy sauce, preferring to add kick with some fresh Serrano peppers. Don’t miss their bountiful tostadas either! They have some wild choices, ask the staff for a recommendation and keep your mind open to bold new flavor mixes. An open relaxed space makes for a great “sobremesa”. The cold Pacíficos keep coming and the conversation keeps going. It’s hard to leave, but not necessarily because of how full you are. They’ve recently opened in Cabo San Lucas. The competition is always fierce when looking for great birria tacos. Allow me to through my newly discovered Danny Birrias Chamizal in the mix. Let me tell you, this place is legit awesome! The space is open and relaxed, their menu is quite large for such a small (although ever growing) space, and the quality of the food is finger lickin’ good! How do they manage great quality food? We had a chance to talk with Danny, the owner and operator behind this fine establishment. It was clear soon enough that she means business. All her meat product: beef, goat and lamb is raised, butchered and prepared by Danny herself! The first morning of 2022. Understandably we needed a cure for our ailments. Something to chase the devil away. Salvation came in the form of @seabrosmarisqueria . We began with “La Maniaka” tostada. A mix of cooked, raw and dried shrimp with octopus, scallops and Cabrilla fish. You best come prepared for the portions! 🤤 Next came my wife’s new addiction: The Marea Roja Tostada (Red Tide Tostada). Basically a shrimp aguachile (cooked or raw) in our case raw, with a wild red sauce made with chiltepin pepper and a touch of tamarind (amongst other proprietary ingredients) makes this dish a MUST TRY in my opinion. We were just about to call it a morning but the cook came out and made us an intriguing offer. He wanted us to try an aguachile special made with Carolina Reaper. If you know your chili peppers then you understand how serious this is. It’s basically the hottest pepper on the planet. I was both worried and excited. I made sure to have a new glass of sparking Topo Chico with Ice before the pain began. The presentation was beautiful, the smell was enticing. I put a couple of shrimps on a tostada and went to town. It was delicious! Sure it was hot, but the sauce was quite well balanced. If you feel the heat getting intense, you can take a break and it’ll die down after a couple of minutes, ready to repeat.
