I lived in Guadalajara for 8 years and had the privilege of tasting many, many tortas ahogadas. It’s one of my favorite breakfast dishes. However, and anyone from Jalisco currently living outside their state will understand, it’s almost impossible to get a real torta ahogada anywhere else. The main problem is the bread, the authentic “birote salado”. A salted hardened loaf of bread made specifically to maintain its integrity as it is completely drenched in a wonderful sauce made from tomatoes, diced onion, cumin, cloves, oregano and garlic. The only place that can make this bread is Jalisco, mainly because of the water. Hence, “El Güero” owner and operator of @tortas_ahogadas_guadalajara , has the bread brought in fresh from Guadalajara! He makes his own pork carnitas and the sauce is on point. From the very first bite I was sent back in time, this is the taste of my high school and college years.
