Ingredients: 1 cup all-purpose flour. 2 large eggs. 1 1/2 cups milk. 1/4 cup melted butter. 1/4 teaspoon salt. 1/4 teaspoon sugar. 1/2 cup grated Gruyre cheese. 1/2 cup cooked chorizo sausage. 1/4 cup diced red bell pepper. 1/4 cup diced green bell pepper. 1/4 cup diced onion. 1/4 cup chopped fresh cilantro. Sour cream and salsa for serving.
Instructions: Put flour, eggs, milk, melted butter, salt, and sugar in a blender. Mix until it's smooth. Put a nonstick skillet over medium-high heat and use cooking spray or butter to lightly coat it. Add a small amount of crepe batter to the pan and swirl it around to cover the bottom evenly. Let it cook for one to two minutes, or until the edges begin to come off. Some Gruyre cheese, cooked chorizo, diced bell peppers, onion, and cilantro should be put on top of the crepe. The crepe should be cooked for one more minute, until the cheese melts and the outside is golden brown. Do the same thing again with the rest of the batter and filling.
