Ingredients: 4 cups diced potatoes. 1 cup diced onions. 1 cup diced celery. 1 cup diced carrots. 4 cups chicken broth. 1 cup whole milk. 1/2 cup heavy cream. 1/2 cup grated Parmesan cheese. 1/4 cup all-purpose flour. 1/4 cup unsalted butter. 2 cloves garlic, minced. 1 teaspoon dried thyme. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: In a large pot, melt butter over medium heat. Add onions, celery, carrots, and garlic. Cook until vegetables are tender. Stir in flour to create a roux. Cook for 2 minutes.
