Quick Sheet-Pan Chicken + Veggies (35 Minutes)

1.5 lb boneless, skinless chicken thighs (or breasts), cut into 2-inch pieces
1 lb baby potatoes, halved
1 red bell pepper, sliced
1 zucchini, sliced into half-moons
1 red onion, cut into wedges
1 tsp dried Italian seasoning
1/2 tsp crushed red pepper flakes (optional)
1 lemon (zest + wedges for serving)
Fresh parsley, chopped (optional)
Heat oven to 425°F. Line a large baking sheet with parchment paper.
Whisk olive oil, garlic, salt, pepper, paprika, Italian seasoning, red pepper flakes, and lemon zest.
Add chicken and veggies. Toss to coat.
Spread on the pan in a single layer.
Roast for 20 to 25 minutes, tossing halfway, until the chicken reaches an internal temperature of 165°F and the edges are golden brown.
Finish with lemon juice and parsley. Taste and adjust salt.
Sauce it: Pesto, tzatziki, or balsamic glaze.
