Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 2 chai tea bags contents only. 1/2 cup unsalted butter, melted. 1 cup plain yogurt. 2 large eggs. 1 tsp vanilla extract. 1/2 cup powdered sugar. 2 tbsp milk. 1/2 tsp ground cinnamon. 1/4 tsp ground ginger. 1/4 tsp ground cardamom. 1/4 tsp ground cloves. 1/4 tsp ground nutmeg.
Instructions: Preheat your oven to 375F 190C. Line a muffin tin with paper liners. In a small bowl, open the chai tea bags and mix the tea contents with the flour, sugar, baking powder, baking soda, salt, and spices cinnamon, ginger, cardamom, cloves, nutmeg. In a separate large bowl, whisk together the melted butter, yogurt, eggs, and vanilla extract until well combined. Gradually add the dry chai spice mixture to the wet ingredients, stirring until just combined. Do not overmix. Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. While the muffins are cooling, make the glaze by whisking together the powdered sugar and milk until smooth. Once the muffins have cooled for a few minutes, drizzle the glaze over the top of each muffin. Let the glaze set for a few minutes, and then enjoy your Double Glazed Chai Spice Muffins!
