A delicious grilled cheese sandwich with soft chicken marinated in pesto and gooey mozzarella cheese between two pieces of crusty sourdough bread. It's a tasty treat that can be eaten for lunch or dinner.
Ingredients: 2 slices of sourdough bread. 2 boneless, skinless chicken breasts. 4 tablespoons pesto sauce. 4 slices of mozzarella cheese. 2 tablespoons olive oil. Salt and pepper to taste. Butter for grilling.
Instructions: On both sides, salt and pepper the chicken breasts. In a pan, heat the olive oil over medium-high heat. Put the chicken breasts in the pan and cook them for about 6 to 7 minutes on each side, or until they are done and a nice golden brown color. Check to see if the temperature inside reaches 74F 165C. Put two tablespoons of pesto sauce on one side of each sourdough slice while the chicken is cooking. On top of the side of each bread slice that has pesto on it, put a slice of mozzarella cheese. The chicken is done when it comes out of the pan. Let it rest for one minute. Cut the chicken breasts into thin strips after they are done cooking. Spread out the chicken slices on top of the mozzarella cheese on one piece of bread. Carefully put the other slice of bread with the pesto and cheese on top to make a sandwich. Cover the outside of the sandwich with butter. Set a clean frying pan or skillet on medium heat. Put the sandwich in the pan and grill it for two to three minutes on each side, or until the cheese melts and the bread turns golden. After taking the sandwich out of the pan, let it cool for a minute, and then cut it in half. Enjoy your tasty Pesto Chicken Sandwich on Sourdough while it's still hot.
