Ingredients: 2 cups white chocolate chips. 1 cup sweetened condensed milk. 1/2 cup canned pumpkin puree. 1/2 teaspoon pumpkin pie spice. 1/4 teaspoon vanilla extract. 1/4 cup chopped pecans optional. Orange food coloring optional.
Instructions: Line an 8x8 inch 20x20 cm square baking pan with parchment paper, leaving some overhang for easy removal. In a microwave-safe bowl, combine the white chocolate chips and sweetened condensed milk. Microwave in 30-second intervals, stirring each time, until the mixture is smooth and fully melted. Stir in the pumpkin puree, pumpkin pie spice, and vanilla extract until well combined. Add orange food coloring if desired for a more vibrant color. Pour the mixture into the prepared baking pan and spread it evenly. If using, sprinkle the chopped pecans on top and gently press them into the fudge. Chill in the refrigerator for at least 2 hours, or until the fudge is firm. Once set, use the parchment paper overhang to lift the fudge out of the pan. Cut the fudge into squares and serve. Enjoy!
