Ingredients: 1 lb baby potatoes, halved. 2 tbsp olive oil. 1 tsp chili powder. 1 tsp cumin. 1/2 tsp paprika. 1/2 tsp garlic powder. 1/4 tsp salt. 1/4 tsp black pepper. 1 red bell pepper, diced. 1/2 cup corn kernels. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. Juice of 1 lime. 1 avocado, diced.
Instructions: Get the oven ready by heating it up to 400F 200C. Put baby potatoes halves in a large bowl. Add olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Toss the potatoes until they are evenly covered. Spread the seasoned potatoes out on a baking sheet. Roast them in a hot oven for 25 to 30 minutes, stirring them once, until they are golden brown and soft. Diced red bell pepper, corn kernels, red onion, cilantro, lime juice, and avocado. Put them all in the same bowl that you used for the potatoes. Once the potatoes are done, put them in the bowl with the rest of the ingredients and let them cool a bit. Toss everything together gently until it's all well mixed. Serve right away or put in the fridge until you're ready to serve.
