This Thai Crunch Chicken Salad is a vibrant and flavorful dish that combines tender grilled chicken with a refreshing mix of veggies, herbs, and a zesty Thai-inspired dressing. It's a perfect balance of sweet, salty, and tangy flavors, with a satisfying crunch from peanuts and crispy rice noodles.
Ingredients: 2 boneless, skinless chicken breasts. 1/4 cup soy sauce. 2 tablespoons lime juice. 2 tablespoons honey. 1 clove garlic, minced. 1 teaspoon grated fresh ginger. 1 cup shredded red cabbage. 1 cup shredded green cabbage. 1 cup shredded carrots. 1 red bell pepper, thinly sliced. 1/2 cup chopped fresh cilantro. 1/4 cup chopped fresh mint. 1/4 cup chopped peanuts. 1/4 cup crispy rice noodles. Lime wedges for serving.
Instructions: In a bowl, mix together soy sauce, lime juice, honey, minced garlic, and grated ginger to make the marinade. Place the chicken breasts in a zip-top bag and pour half of the marinade over them. Seal the bag and refrigerate for at least 30 minutes or overnight for best results. Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes per side or until cooked through. Remove from heat and let it rest for a few minutes before slicing. In a large bowl, combine the shredded red cabbage, green cabbage, carrots, red bell pepper, cilantro, and mint. Pour the remaining marinade over the salad ingredients and toss to combine. Divide the salad onto serving plates and top with sliced grilled chicken.
