I imagine if it was 6 episodes it would have been
Status quo - Aziraphel in heaven prepping for Jesus, Crowley on Earth trying to get his car. Ends with Metatron's death
Jesus goes missing, Aziraphel goes down to earth talk to Crowley, Sandlephon murdered, a bit more exploration of what happened to the street since Aziraphel left to make that more of an actual plot
Jesus starts learning about 'finding the lady,' Aziraphel infiltrates hell. Crowley tempts him with dim sum, Uriel murdered, Aziraphel and Crowley visit heaven.
Jesus heals the street (this is built out more so its a larger part of the plot). Michael starts erasing entire countries, Aziraphel and Crowley get in the Bentley and leave the planet.
Aziraphel and Crowley confront Michael, Michael erases the world except for the bookshop. The two retreat to an empty bookshop where they now have their big emotional confrontation. Satan turns up, and then Aziraphel summons God.
And then, while i'm ok with the finale, I am also still battlescared from Umbrella Academy basically doing the same thing and using the finale to erase the entire rest of the story, so i've got two options
6. God sends the two off to discuss what they want to do. they decide what they did in canon, and we get a much longer human AU. This sticks to the 'free will' theme, but not the 'this world is not disposable' theme so i'm not a huge fan. It also skirts around the weird mythology thing of making a world with no God...but God still made it so tbh it seems like She's just humouring them and free will is still an illusion
Option 2 (canon divergence)
6. They ask for the world to be restored. God tells them sure, they just have to write it all out, the same way they wrote Her into the shop (honestly that miracle being introduced in this scene and then not used for this pissed me off). The two of them have to take one of the blank books off the shelf and transcribe the entire history of the world as they remember it (this is a great opportunity for a bit of humour in the selection of the book title. A Brief History of Time? Paradise Lost? The Nice and Accurate Prophecies of Agnes Nutter?). This would lead to a sequence of us seeing them writing out their entire history, lots of flashbacks and character cameos. As they write things are restored around them, the street returns, countries reappear, people come back. God leaves them to it when they are in mid writing flow, and the show ends with the bookshop being the new sanctuary of the Book of Life, and Aziraphel and Crowley being its scribes.
