Ingredients: 4 large sweet potatoes, peeled and cubed. 1/2 cup brown sugar. 1/4 cup melted butter. 1/4 cup milk. 2 eggs, beaten. 1 teaspoon vanilla extract. 1/2 teaspoon cinnamon. 1/4 teaspoon nutmeg. 1/4 teaspoon salt. 1 cup mini marshmallows.
Instructions: In a bowl, mix together brown sugar, melted butter, milk, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt. Place sweet potatoes in the slow cooker. Pour the mixture over the sweet potatoes and stir to coat. Cover and cook on low for 6-8 hours or until sweet potatoes are tender. Sprinkle mini marshmallows over the sweet potatoes during the last 30 minutes of cooking. Serve warm and enjoy!
