Whipped cream and maple syrup for topping.
Instructions: Put the eggs, brown sugar, vanilla extract, mashed sweet potatoes, and melted butter in a bowl. Mix the flour, baking powder, salt, cinnamon, and nutmeg together in a different bowl using a whisk. Slowly add the dry ingredients to the sweet potato mixture while mixing in the milk every so often. Don't mix any further than that. If you want, you can fold in the chopped pecans. Warm up your waffle iron and use cooking spray to lightly coat it. Place the waffle iron that has already been heated with the waffle batter and cook it according to the maker's directions until it is golden brown and crisp. Add whipped cream and maple syrup to the waffles that taste like sweet potato pie. Have fun!

Instructions: In a food processor, combine the mashed sweet potatoes, chickpeas, minced garlic, lemon juice, olive oil, ground cumin, paprika, and salt. Blend until smooth, scraping down the sides as needed. If the mixture is too thick, add water, 1 tablespoon at a time, until desired consistency is reached. Taste and adjust seasoning if necessary. Transfer the sweet potato hummus to a serving bowl. Garnish with a drizzle of olive oil, a sprinkle of paprika, and fresh herbs if desired. Serve with pita bread, crackers, or vegetable sticks.

Pinch of black pepper. Cooking spray or oil for cooking.

Ingredients: 4 medium sweet potatoes. 1 cup quinoa, rinsed and drained. 2 cups vegetable broth. 1 cup black beans, cooked and drained. 1 cup corn kernels, fresh or frozen. 1 red bell pepper, diced. 1/2 cup red onion, finely chopped. 2 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon paprika. Salt and pepper to taste. 2 tablespoons olive oil. 1/2 cup fresh cilantro, chopped. 1/4 cup pumpkin seeds, toasted.
Instructions: Turn on the oven and heat it up to 400F 200C. Clean the sweet potatoes and use a fork to poke holes in them. Put them on a baking sheet and bake them until soft, about 45 to 60 minutes. Bring vegetable broth to a boil in a saucepan. Turn down the heat, add the quinoa, cover, and let it simmer for 15 to 20 minutes, or until the quinoa is cooked and the liquid is absorbed. Warm up the olive oil in a big pan over medium-low heat. Put in the red onion, red bell pepper, and garlic. Cook the vegetables in oil until they are soft. To the pan, add the corn, cumin, paprika, salt, and pepper after the quinoa is cooked. After 5 minutes, until everything is hot, mix it well and cook for another 5 minutes. Slit the baked sweet potatoes in half and use a fork to fluff up the inside. Put some of the quinoa mix into each sweet potato. Put toasted pumpkin seeds and fresh cilantro on top. Serve right away and enjoy!

Ingredients: 2 medium sweet potatoes, peeled and cubed. 2 cups all-purpose flour, plus extra for dusting. 1/2 teaspoon salt.
Instructions: Boil the sweet potatoes in a pot of water until fork-tender, about 15 minutes. Drain the sweet potatoes and mash them until smooth. In a large mixing bowl, combine the mashed sweet potatoes, flour, and salt. Mix until a dough forms. Divide the dough into small portions and roll each portion into a long rope on a floured surface. Cut the ropes into small pieces and roll each piece along the tines of a fork to create ridges. Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the surface, about 2-3 minutes. Remove the gnocchi with a slotted spoon and transfer to a serving dish. Serve hot with your favorite vegan sauce or toppings.
