Ingredients: 1 lb ground beef. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 tsp ground cumin. 1 tsp chili powder. 1/2 tsp smoked paprika. Salt and pepper to taste. 1 cup shredded cheese cheddar or Monterey Jack. 12 small flour tortillas. Oil for frying. Salsa, guacamole, and sour cream for serving.
Instructions: In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is softened. Stir in the cumin, chili powder, smoked paprika, salt, and pepper. Cook for another 2-3 minutes, then remove from heat. Preheat the oven to 400F 200C. Place a small amount of the beef mixture and shredded cheese onto each tortilla, then roll tightly. Secure each taquito with toothpicks. In a large skillet, heat oil over medium-high heat. Fry the taquitos in batches until golden brown and crispy, about 2-3 minutes per side. Transfer the fried taquitos to a baking sheet and bake in the preheated oven for 5-7 minutes to ensure the filling is heated through. Serve hot with salsa, guacamole, and sour cream for dipping.
