This Keto White Wine and Cheddar Cauliflower Cheese Casserole is a rich and flavorful dish perfect for those following a low-carb lifestyle. The combination of creamy cheese sauce infused with white wine makes for a decadent treat.
Ingredients: 1 medium head cauliflower, cut into florets. 2 tablespoons butter. 2 cloves garlic, minced. 1 cup dry white wine. 1 cup heavy cream. 2 cups shredded sharp cheddar cheese. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Before you start cooking, heat the oven to 375F 190C. Boil the cauliflower florets in a large pot for three to four minutes. Then, drain the florets and set them aside. Melt the butter over medium-low heat in a saucepan. Put in the minced garlic and cook until it smells good. Add the white wine and let it simmer for two to three minutes so that it gets a little less thick. Add the heavy cream and stir it in. Then, bring the whole thing to a slow simmer. Slowly add the shredded cheddar cheese and keep stirring until it melts and is smooth. Add salt and pepper to taste to the cheese sauce. Blanch the cauliflower florets and put them in a casserole dish that has been greased. Cover the cauliflower with the cheese sauce, making sure it covers it all. Put it in an oven that is already hot and bake for 20 to 25 minutes, or until the cauliflower is soft and the sauce is bubbling. Before serving, sprinkle with chopped fresh parsley.
