Ingredients: 2 cups almond flour. 1/4 teaspoon sea salt. 1/4 teaspoon baking soda. 1/4 cup coconut oil, melted. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/4 cup raspberry jam, preferably homemade.
Instructions: Preheat the oven to 350F 175C. Line a baking sheet with parchment paper. In a large bowl, combine almond flour, sea salt, and baking soda. Stir in melted coconut oil, maple syrup, and vanilla extract until well combined. Roll the dough into small balls and place them on the prepared baking sheet. Using your thumb, make an indentation in the center of each cookie. Fill each indentation with raspberry jam. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
