A gluten-free twist on the classic Chicken Parmesan, this recipe features tender chicken breasts coated in a flavorful gluten-free breadcrumb mixture, topped with marinara sauce and melted mozzarella cheese.
Ingredients: 4 boneless, skinless chicken breasts. 1 cup gluten-free breadcrumbs. 1/2 cup grated Parmesan cheese. 1 teaspoon dried oregano. 1 teaspoon dried basil. 1/2 teaspoon garlic powder. Salt and pepper to taste. 2 eggs, beaten. 1 cup marinara sauce. 1 cup shredded mozzarella cheese. Fresh basil leaves for garnish optional.
Instructions: Get the oven ready by heating it up to 400F 200C. Add oregano, basil, garlic powder, salt, and pepper to a shallow dish. Then add gluten-free breadcrumbs and mix them in. First, coat each chicken breast in beaten eggs. Then, cover it with the breadcrumb mixture and press it down gently to stick. The chicken breasts should be put on a baking sheet that has been greased. After the oven is hot, bake the chicken for 20 to 25 minutes, or until it is fully cooked. Take the chicken breasts out of the oven and cover each one with marinara sauce. Add some shredded mozzarella cheese on top of the sauce. Put it back in the oven and bake for another 5 to 10 minutes, or until the cheese melts and starts to bubble. If you want, add fresh basil leaves as a garnish before serving.
