These vegan pecan snowballs are a delightful treat for any occasion. They are buttery, nutty, and coated in a dusting of powdered sugar, making them perfect for holiday gatherings or everyday indulgence.
Ingredients: 2 cups pecans, finely chopped. 1 cup all-purpose flour. 1/4 cup powdered sugar, plus extra for coating. 1/2 cup vegan butter, softened. 1 tsp vanilla extract.
Instructions: Preheat oven to 350F 175C. In a large bowl, mix together pecans, flour, and powdered sugar. Add softened vegan butter and vanilla extract to the dry mixture. Mix until well combined and a dough forms. Shape the dough into 1-inch balls and place them on a parchment-lined baking sheet. Bake for 15-18 minutes, or until lightly golden brown. Allow the cookies to cool slightly, then roll them in powdered sugar while still warm. Let the cookies cool completely, then roll them in powdered sugar again for a snowy finish. Serve and enjoy!
