A delicious and spicy Cajun chicken and rice dish cooked in one pot for easy cleanup. The combination of Cajun seasoning, tender chicken, rice, and vegetables creates a flavorful meal that's perfect for a quick weeknight dinner.
Ingredients: 1 lb chicken breasts, diced. 1 tablespoon Cajun seasoning. 1 tablespoon olive oil. 1 onion, diced. 1 bell pepper, diced. 3 cloves garlic, minced. 1 cup long grain rice. 1 can 14.5 oz diced tomatoes. 2 cups chicken broth. 1/2 cup heavy cream. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: In a bowl, toss diced chicken with Cajun seasoning until evenly coated. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook until browned, about 5 minutes. Remove from skillet and set aside. In the same skillet, add diced onion, bell pepper, and minced garlic. Cook until softened, about 5 minutes. Stir in long grain rice, diced tomatoes, and chicken broth. Bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed. Return cooked chicken to the skillet, stir in heavy cream, and cook until heated through. Season with salt and pepper to taste. Garnish with chopped parsley before serving.
