This Almond Butter Pad Thai Sauce is a creamy and flavorful alternative to traditional Pad Thai sauce, paired with nutrient-rich kelp noodles and colorful vegetables for a healthy and satisfying meal.
Ingredients: 1/2 cup almond butter. 1/4 cup soy sauce. 2 tablespoons rice vinegar. 2 tablespoons maple syrup. 1 tablespoon lime juice. 2 cloves garlic, minced. 1 teaspoon grated ginger. 1/4 teaspoon red pepper flakes. 1 package kelp noodles, rinsed and drained. 1 cup shredded carrots. 1 cup thinly sliced bell peppers. 1 cup bean sprouts. 1/4 cup chopped cilantro. 2 green onions, thinly sliced. 2 tablespoons chopped peanuts optional, for garnish.
Instructions: In a small bowl, whisk together almond butter, soy sauce, rice vinegar, maple syrup, lime juice, garlic, ginger, and red pepper flakes until smooth. Set aside. In a large bowl, combine kelp noodles, shredded carrots, bell peppers, bean sprouts, cilantro, and green onions. Pour the almond butter sauce over the noodle mixture and toss until well combined.
