This Chili Cornbread Salad with Bacon is a hearty and flavorful dish that combines the rich flavors of chili, the crunch of cornbread, and the savory goodness of bacon. It's perfect for a comforting meal or a potluck gathering.
Ingredients: 1 cup of cornbread, crumbled. 1 can 15 ounces of chili, heated. 1 cup of shredded cheddar cheese. 1/2 cup of diced tomatoes. 1/4 cup of diced red onions. 1/4 cup of sliced black olives. 1/4 cup of sliced green onions. 1/4 cup of cooked and crumbled bacon. 1/4 cup of sour cream. 1/4 cup of salsa. 1/4 cup of chopped fresh cilantro. Salt and pepper to taste.
Instructions: Start by preparing your cornbread. You can use store-bought or homemade cornbread. Crumble it into bite-sized pieces and set aside. Heat the chili in a saucepan or microwave until it's hot and ready to serve. In a large serving bowl, layer the ingredients as follows: Start with a layer of crumbled cornbread at the bottom. Pour the hot chili over the cornbread, making sure it covers it evenly. Sprinkle the shredded cheddar cheese over the hot chili so it melts slightly. Add the diced tomatoes, diced red onions, sliced black olives, and sliced green onions on top of the cheese layer. Sprinkle the cooked and crumbled bacon over the salad for a delicious bacony crunch. In a small bowl, mix together the sour cream and salsa to create a creamy dressing. Drizzle this dressing over the salad. Finish by garnishing the salad with chopped fresh cilantro and seasoning with salt and pepper to taste. Serve immediately, or refrigerate for a cold salad option. Enjoy your Chili Cornbread Salad with Bacon!
