This carrot ginger miso dressing doesn't have any oil in it, and it tastes great on any salad or Buddha bowl. When you mix the sweet carrots with the sour ginger and miso, you get a great balance of flavors.
Ingredients: 2 large carrots, peeled and chopped. 1 thumb-sized piece of ginger, peeled and chopped. 2 tablespoons white miso paste. 2 tablespoons rice vinegar. 2 tablespoons water. 1 tablespoon maple syrup or agave syrup. 1 tablespoon soy sauce or tamari. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: Chopped carrots, ginger, miso paste, rice vinegar, water, maple syrup, soy sauce, and minced garlic should all be put in a blender. Scrape down the sides of the bowl as needed to make the mixture smooth. To taste, add salt and pepper and change any other seasonings that need it. If the dressing is too thick, add a little more water until it's the right consistency.
