In this Grilled Zucchini Pasta Salad, soft grilled zucchini is mixed with salty tortellini, creamy white beans, and sweet cherry tomatoes. A simple balsamic vinaigrette is used to dress the salad. This dish is great for picnics, potlucks, or dinner during the week because it's cool and filling.
Ingredients: 1 lb tortellini pasta. 2 medium zucchinis, sliced. 1 can 15 oz white beans, drained and rinsed. 1 cup cherry tomatoes, halved. 1/4 cup olive oil. 2 tablespoons balsamic vinegar. 2 cloves garlic, minced. Salt and pepper to taste. Fresh basil leaves, chopped for garnish.
Instructions: Warm the grill up to a medium-high level. Follow the directions on the package to cook the tortellini. Once it's done, drain it and set it aside to cool. Put sliced zucchini, minced garlic, salt, and pepper in a bowl. Add 2 tablespoons of olive oil and toss to coat. About 34 minutes on each side, grill the zucchini slices until they are soft and a little charred. Put cooked tortellini, grilled zucchini, white beans, and cherry tomatoes in a large bowl. To make the dressing, mix the rest of the olive oil and balsamic vinegar in a small bowl with a whisk. Add the dressing to the pasta salad and gently toss everything together. Before serving, top with chopped fresh basil leaves. Have fun!
