A tasty and healthy alternative to burgers made with sweet potato patties and avocado sour cream. Great for a meal without meat!
Ingredients: 2 medium sweet potatoes, peeled and grated. 1 cup black beans, cooked and mashed. 1/2 cup breadcrumbs. 1/4 cup red onion, finely chopped. 1/4 cup cilantro, chopped. 1 tsp cumin. 1/2 tsp paprika. Salt and pepper to taste. 2 avocados, sliced. 4 burger buns. Lettuce and tomato slices for garnish. Olive oil for cooking.
Instructions: Grate sweet potatoes and mix them with black beans that have been mashed. Add breadcrumbs, red onion, cilantro, cumin, paprika, salt, and pepper. Combine well. Take the mixture and shape it into 4 burger patties. Put the pan on medium heat and add a little olive oil. They should be cooked for four to five minutes on each side, or until they are golden brown and done all the way through. In the same pan, toast the burger buns until they are lightly browned while the patties are cooking. Place a sweet potato patty on the bottom half of each bun. Then add avocado slices, lettuce, and tomato on top of each patty. To finish the burger, put the top half of the bun on top of the assembled ingredients. Love your Sweet Potato Avocado Burger!
