Ingredients: 2 lbs beef stew meat, cubed. 4 carrots, peeled and sliced. 4 potatoes, peeled and cubed. 1 onion, diced. 3 cloves garlic, minced. 2 cups beef broth. 1 can 14.5 oz diced tomatoes. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste.
Instructions: Place beef stew meat, carrots, potatoes, onion, and garlic into the slow cooker. Pour beef broth and diced tomatoes over the ingredients. Add dried thyme, dried rosemary, salt, and pepper. Stir to combine. Cover and cook on low for 8 hours or on high for 4 hours, until beef and vegetables are tender. Serve hot and enjoy!
