The lemon flavor in these cupcakes is just right, and the surprise inside is really refreshing. They're a tasty and fun treat for any event!
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 2 tsp lemon zest. 2 tbsp lemon juice. 1/2 cup whole milk. 1/2 tsp vanilla extract. 1/4 cup lemon popsicle puree. Yellow food coloring optional. 12 lemon popsicles mini size for decoration.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a bowl, whisk together the flour, baking powder, and salt. Set aside. In another bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest and lemon juice. Gradually add the dry ingredients mixture to the wet ingredients, alternating with the milk, beginning and ending with the dry mixture. Mix until just combined. Add the lemon popsicle puree and a few drops of yellow food coloring if desired and mix until the batter is well combined and has a consistent lemony color. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. Once the cupcakes are completely cooled, use a small ice cream scoop or a melon baller to create a well in the center of each cupcake, being careful not to go all the way through. Insert a mini lemon popsicle into each well you created in the cupcakes. Serve and enjoy your delightful Lemon Popsicle Cupcakes!

There is a surprise inside each of these delicious Bourbon Buckeyes, making them a delightful treat. These make a fun dessert for any time of day or night, especially for special occasions because they combine creamy peanut butter, bourbon, and a secret surprise.
Ingredients: 1 1/2 cups creamy peanut butter. 1/2 cup unsalted butter, softened. 1 teaspoon vanilla extract. 1/4 cup bourbon. 4 cups powdered sugar. 1 cup semisweet chocolate chips. 1 tablespoon coconut oil. 24 small surprises e.g., mini chocolate chips, caramel candies, or nuts. Crushed pretzels, for garnish optional. Sea salt flakes, for garnish optional.
Instructions: Put the softened unsalted butter, powdered sugar, bourbon, vanilla extract, and creamy peanut butter in a mixing bowl. Blend the ingredients until they are thoroughly mixed and take on the consistency of dough. Using your palm, flatten small portions of the peanut butter mixture. Position a tiny surprise such as a mini chocolate chip, caramel candies, or nut in the middle and encircle it with the peanut butter mixture to create a ball. For each of the 24 surprises, repeat this process. After lining a baking sheet with parchment paper, place the peanut butter balls on it and freeze for approximately half an hour. Melt the coconut oil and semisweet chocolate chips in 30-second bursts in a microwave-safe bowl, stirring in between until thoroughly melted and smooth. Dip each frozen peanut butter ball completely into the melted chocolate using a fork or toothpick. Reposition the chocolate on the baking sheet lined with parchment paper, letting any excess drip off. For extra texture and taste, you can top the chocolate-coated peanut butter balls with crushed pretzels and sea salt flakes, if you'd like. The chocolate coating should set after about an hour of refrigeration for the Bourbon Buckeyes. Present and savor your Bourbon Buckeyes, which contain a surprise! Any leftovers should be refrigerated in an airtight container.
