Ingredients: 2 3/4 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 1 cup unsalted butter, softened. 1 1/2 cups white granulated sugar. 1 large egg. 1 teaspoon vanilla extract. Assorted colored candy e.g., M&Ms, Skittles. 1/4 cup powdered sugar for decorating. Food coloring optional.
Instructions: In a medium bowl, whisk together the flour, baking soda, and baking powder. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together. If desired, divide the dough into separate portions and add food coloring to each portion for a colorful dough. Wrap the dough in plastic wrap and refrigerate for at least 1 hour. Preheat your oven to 350F 175C and line a baking sheet with parchment paper. Take a small amount of dough and roll it into a ball about 1.5 inches in diameter. Flatten the ball slightly and place a few pieces of assorted colored candy in the center. Take another small amount of dough and roll it into a flat circle to cover the candy-filled dough ball. Seal the edges of the two dough pieces together, making sure no candy is visible. Repeat the process with the remaining dough and candy. Place the filled dough balls on the prepared baking sheet, leaving some space between each cookie. Bake in the preheated oven for 10-12 minutes or until the edges are slightly golden. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes. Transfer the cookies to a wire rack to cool completely.
