For any event, these gluten-free bunny cupcakes are a fun and tasty treat. They're simple to make and great for Easter or a party for kids. Everyone will smile when they see the cute bunny decorations!
Ingredients: 1 box gluten-free vanilla cake mix. 3 large eggs. 1/2 cup unsalted butter, melted. 1 cup milk dairy or non-dairy. 1 tsp pure vanilla extract. 1 batch of gluten-free vanilla frosting. 1/4 cup shredded coconut for bunny fur. 12 gluten-free chocolate chips for bunny eyes. 6 pink jelly beans or candies for bunny noses. 12 pink mini marshmallows for bunny ears. Pink food coloring optional. Gluten-free sprinkles optional, for decoration.
Instructions: Turn on your oven and heat it up to 350F 180C. Use cupcake liners to line a cupcake tin. Put the gluten-free vanilla cake mix, eggs, melted butter, milk, and vanilla extract in a large bowl. Mix everything together well. Make sure that each cupcake liner is two thirds full of mix. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Let the cupcakes cool all the way down on a wire rack after taking them out of the oven. Get the gluten-free vanilla frosting ready while the cupcakes cool. If you want, you can make the frosting pink by adding a few drops of pink food coloring. Once the cupcakes are completely cool, put a lot of vanilla frosting on top of each one. To make the bunny fur, sprinkle shredded coconut on top of the frosting. As bunny eyes, put two gluten-free chocolate chips on top of each cupcake. For the bunny's nose, put on a pink jelly bean or candy. To make bunny ears out of the pink mini marshmallows, cut them in half diagonally and put them on the cupcakes.
