Ingredients: 1 small seedless watermelon, sliced into thick wedges. 1 cup cherry tomatoes, halved. 1 cucumber, diced. 1/2 cup crumbled feta cheese. 1/4 cup black olives, sliced. 1/4 cup red onion, thinly sliced. 1/4 cup fresh mint leaves, chopped. 2 tablespoons extra virgin olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: Warm up the grill over medium-high heat. For two to three minutes on each side, grill the watermelon wedges until grill marks show up. Take the watermelon off the grill and let it cool down a bit. Put the watermelon cubes in a large bowl.
