Ingredients: 1 package 20 oz fresh cheese tortellini. 2 cups cherry tomatoes, halved. 1 cup cucumber, diced. 1/2 cup red onion, finely chopped. 1/2 cup black olives, sliced. 1/2 cup fresh basil leaves, chopped. 1/4 cup feta cheese, crumbled. 1/4 cup Italian dressing. Salt and pepper to taste.
Instructions: Cook the tortellini according to package instructions until al dente. Drain and let it cool. In a large bowl, combine the cooked and cooled tortellini with cherry tomatoes, cucumber, red onion, black olives, and fresh basil. Drizzle Italian dressing over the salad and gently toss to coat all ingredients evenly. Add crumbled feta cheese and season with salt and pepper to taste.
