These modernist latkes are a different take on the traditional Hanukkah dish. They are crispier and taste better. These latkes are great for any event and will wow your guests with their unique taste and presentation.
Ingredients: 500g potatoes, peeled and grated. 1 small onion, finely chopped. 2 eggs. 2 tbsp all-purpose flour. 1 tsp baking powder. Salt and pepper to taste. Vegetable oil for frying.
Instructions: Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture. In a bowl, mix together the grated potatoes, chopped onion, eggs, flour, baking powder, salt, and pepper until well combined. Heat vegetable oil in a large skillet over medium heat. Scoop a portion of the potato mixture into the skillet, flattening it with a spatula to form a pancake shape. Fry the latkes until golden brown and crispy on both sides, about 3-4 minutes per side. Transfer the cooked latkes to a paper towel-lined plate to drain excess oil. Serve the latkes hot with your favorite toppings, such as sour cream, applesauce, or smoked salmon. Enjoy!

Ingredients: 1 can 15 ounces cannellini beans, drained and rinsed. 2 cloves garlic, minced. 2 tablespoons fresh lemon juice. 1/4 cup extra virgin olive oil. 1/4 cup fresh parsley leaves, chopped. 1/2 teaspoon ground cumin. Salt and pepper to taste. Optional toppings: chopped parsley, olive oil drizzle, red pepper flakes.
Instructions: Put cannellini beans, garlic that has been minced, lemon juice, olive oil, parsley, and ground cumin in a food processor.
