Gluten Free Apple Spice puddingÂ
Itâs wild and woolly here tonight, so I made myself a steamed pudding. I havenât made one in years, and didnât have all the ingredients for one of my tried and true recipes, so I made up a recipe. Iâd forgotten how much I adore steamed puddings. The texture is like nothing else.
IngredientsÂ
1 grated granny smith apple
3/4 cup sultanas
3/4 cup coconut milk (or milk)
3/4 cup rum (or brandy)
100g margarine (or butter)
1/2 cup brown sugar
2 eggs
1 cup rice flour (or plain flour)
1 tsp baking powder
1/2 cup ground almonds
1 tsp mixed spice
2 tsp vanilla essence
1/3 cup golden syrup (optional)

Note: I didnât actually measure anything. I added the ingredients by sight, but these measurements are pretty close and will work. Donât stress if youâre a bit over or under on any of them. If you donât need to make this GF, you can take out the ground almonds and just use more plain flour if you like.
Instructions
Peel and grate the apple. Put it and the sultanas in a saucepan along with the milk and rum, and simmer over a low heat for 5 to 10 minutes until sultanas are plump and soft. Cool for 5 to 10 minutes.
While the fruit is simmering, spray a pudding basin with cooking spray, along with a piece of alfoil that will fit over the top and help keep the lid sealed. If you donât have a pudding basin, a small casserole dish or something similar will work. Just make sure the sides are fairly high.
Cream the margarine and brown sugar. Add in the eggs separately and beat well. Fold in the flour, almond meal, spice, baking powder and vanilla. Then add in the warm (but not hot) fruit mixture and mix well. It will smell delicious.
If you like, pour 1/3 cup of golden syrup to the bottom of the pudding basin before you add in the batter. (Thatâs what I did.)
Pour the batter into your prepared pudding basin. Put the greased alfoil over the top, and crimp the edges in place to make a good seal. If the pudding basin has a lid, use it as well.
Put your pudding into a large pot. Pour boiling water around it until itâs about half way up the sides of the pudding basin and put on the lid of the pot. Cook at a gentle boil for about 2.5 hours. Check the level of the water every 20 minutes or so and add more when needed.
Once itâs done, carefully take the pudding out of the pot. Remove the lid and alfoil while still hot. Run a butter knife around the edge of the pudding, then invert it over a plate. It should come out so easily you barely have time to line it up.
Serve with your topping of choice - cream, coconut cream, ice-cream, and/or custard.
When I make this again, I will add more mixed spice, and I might try using pumpkin instead of apple, and a bit of orange or lemon zest if I have it.
