A lot of people have been asking, so I thought I'd share my simple, no-knead bread recipe. It's a modified version of the @markbittman recipe. I've been baking a loaf a week for years now, and it always comes out perfect. Ingredients: 3 cups all purpose flour (or a mix of 2-2.5 cups all purpose and 0.5 or 1 cup rye/spelt/whole wheat etc.) 1/2 tsp instant yeast 1 tsp salt 1/2 tsp sugar 2 cups room temperature water (plus more as needed) Method: 1. Add yeast, salt and sugar to water in a large bowl. Let sit 5 minutes or so until yeast is fully dissolved. 2. Mix in flour. It will be lumpy and sticky! 3. Let rise at least 8 hours. I usually mix before I go to work and leave it on the counter all day. Cover the bowl with a tea towel. 4. Time to bake! Preheat oven to 450F. Place an empty Dutch oven, with lid, in the oven as it heats up. You want to pot to be hot before you add the dough. 5. As the pot and oven heat, lightly flour hands and clump the dough together in a ball. This is literally all the kneading you need to do - approximately 15 seconds. 😉 7. Once the oven is hot, add the ball of dough to the pot. Sprinkle with some semolina if you have it. 8. Bake 20 minutes with the lid on and 20 minutes with the lid off. Pop the bread out of the Dutch oven and place directly on the rack for another 5 to 10 minutes. (I sometimes place a baking tray on the second rack below to catch any falling flour or crumbs). 9.
