Raided my garden today and made this veggie dish for dinner. It was SO good. No real recipe, but here’s what I did. Sautéed a large chopped onion and 2 garlic in about 3-4 tablespoons olive oil for about 2 minutes. Added 1 large sweet pepper and one chili pepper (deseeded and chopped), 2 medium zucchini, 2 cups cubed eggplant, one large chopped tomato plus about 2 cups halved cherry tomatoes, a few string beans, about 3 tablespoons chopped basil and a couple of teaspoons of chopped fresh oregano and cooked that, stirring occasionally, for maybe 20-25 minutes. I added a little salt.
