Ingredients: 4 lbs beef ribs. 1/4 cup kosher salt. 1/4 cup black pepper. 2 tbsp paprika. 1 tbsp garlic powder. 1 tbsp onion powder. 1 tbsp brown sugar. 1 tsp cayenne pepper. 1/2 cup mustard for binding.
Instructions: Preheat your smoker to 225F 107C. Trim excess fat from the beef ribs and pat them dry. In a bowl, mix kosher salt, black pepper, paprika, garlic powder, onion powder, brown sugar, and cayenne pepper to create the rub. Brush mustard over the ribs to help the rub adhere, then generously coat the ribs with the spice rub. Place the ribs on the smoker grates and cook for 4-5 hours, maintaining a steady temperature. Wrap the ribs in butcher paper and return them to the smoker for an additional 2-3 hours, or until they reach an internal temperature of 203F 95C. Remove the ribs from the smoker, let them rest for 15 minutes, then slice and serve.
