Cranberry butter made in a slow cooker tastes great because it has tart cranberries, sweet sugar, and warm spices. You can spread it on toast or use it as a topping for your favorite breakfast foods.
Ingredients: 4 cups fresh cranberries. 1 cup granulated sugar. 1/2 cup orange juice. 1/2 teaspoon cinnamon. 1/4 teaspoon nutmeg. 1/4 teaspoon cloves.
Instructions: Rinse the cranberries and take out any stems or leaves that aren't whole. Put the cranberries, sugar, orange juice, cinnamon, nutmeg, and cloves in a slow cooker. Cover and set the heat to low. Let it cook for 6 to 8 hours, or until the cranberries are very soft and broken up. Blend the mixture with an immersion blender until it is smooth. Leave the lid off and keep cooking on low for another one to two hours, or until the consistency you want is reached. Check the taste and add more sugar or seasoning if needed. Put the cranberry butter in clean jars and let them cool completely before putting them in the fridge. Spread it on toast or muffins, or put it on top of yogurt or oatmeal.
