These gluten-free pretzel sticks and bites are a great new take on Auntie Anne's old favorite snack. They're soft and sweet, and you can dip them in anything.
Ingredients: 2 cups gluten-free all-purpose flour. 1 packet 2 1/4 tsp active dry yeast. 1 cup warm water. 1/4 cup granulated sugar. 1/2 tsp salt. 2 tbsp vegetable oil. 1/2 cup baking soda. 3 cups hot water. 1/4 cup granulated sugar for coating. 1 tsp ground cinnamon for coating.
Instructions: In a small bowl, combine the warm water and granulated sugar. Sprinkle the yeast over the water mixture and let it sit for 5-10 minutes until foamy. In a large mixing bowl, combine the gluten-free flour and salt. Pour in the yeast mixture and vegetable oil. Mix until a dough forms. Knead the dough on a lightly floured surface until smooth. Divide it into small pieces and roll them into bite-sized balls or shape them into sticks. In a separate bowl, mix the baking soda into the hot water until dissolved. Dip each pretzel bite or stick into the baking soda solution and place them on a parchment-lined baking sheet. Bake in a preheated oven at 425F 220C for 10-12 minutes, or until they are golden brown. While the pretzel bites are baking, mix the remaining 1/4 cup of granulated sugar and ground cinnamon in a bowl. As soon as the pretzel bites come out of the oven, roll them in the cinnamon sugar mixture to coat them evenly. Serve warm and enjoy your gluten-free Auntie Anne's-style cinnamon sugar pretzel bites and sticks!
