Savory quinoa cakes topped with avocado, smoked salmon, and a perfectly poached egg will make your taste buds happy. A healthy dish that will fill you up at any meal!
Ingredients: 1 cup quinoa, cooked. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup chopped fresh parsley. 2 eggs, beaten. Salt and pepper to taste. 2 avocados, sliced. 100g smoked salmon. 4 eggs, poached. Chopped chives for garnish.
Instructions: In a large bowl, combine cooked quinoa, breadcrumbs, Parmesan cheese, chopped parsley, beaten eggs, salt, and pepper. Mix well until the ingredients are evenly distributed and form a sticky mixture. Shape the quinoa mixture into small patties, about 2 inches in diameter. Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil. Cook the quinoa cakes for 3-4 minutes on each side, or until golden brown and crispy. While the quinoa cakes are cooking, poach the eggs to your liking. Once the quinoa cakes are done, assemble the dish by placing avocado slices on top of each cake, followed by a slice of smoked salmon. Carefully place a poached egg on top of the salmon, and garnish with chopped chives. Serve immediately and enjoy the delicious combination of quinoa, avocado, smoked salmon, and poached egg!
