The results of the geoduck and lobster experiment: 1st pic - Poached and Lightly Broiled Lobster In A Lemon Parsley Butter. | 2nd pic - Fresh Geoduck Crudo, dressed with lemon, scallion oil, fresh black pepper + sea salt. | 3rd pic - Fresh Geoduck Blanched In A White Wine Broth, served with a rustic Italian batard. 🙂🍷 This was the first time I'd ever prepared live lobster or Geoduck. Both were absolutely delicious and I was surprised by how easy the geoduck was to prepare. The live lobster was a bit of a moral struggle, but I knew I couldn't just throw him back, so I sucked down a big glass of wine, said a prayer for the lobster and did the deed. I made sure to prepare it with a lot of love (it was really delicious) and made a stock of the remaining shells and poaching liquid, for later use. Overall, the dinner was amazing and it served as good practice for Christmas Eve.
