Between the sensory food issues, to taste, and just downright dislike of anything that isn't a chicken nugget, food in my house is hell. And the reality is for humans who don't cook, they sure are picky. In our house most of the cooking is done by me, most of the eating is done by everyone else. We're to a point now that trying new foods are basically my worst nightmare. Recently one of the members of my house needed to change their diet and to be frank, we've all been dreading it. So after a relatively exhaustive google search, like 30 minutes of looking at pictures and asking myself would everyone eat that, I landed on 4 recipes to try, starting with spaghetti squash taco bowls. And it was a WIN on all levels. From 5 and up, everyone ate the bowl and they liked it. I even had a request for it every week. This is basically a miracle and I'm still so excited by Monday dinner going so smoothly that I still want to brag. I was out of town last weekend for a soul filling two days with my sisters. That meant that Sunday prep became Monday morning and nap time prep. This is my toddler’s to go box for the week. I only bring veggies and protein on the go because when we’re at home, she knows the cupboard snacks and fruit are there and I choose not to pick that battle. This lasts us the 3-4 hours we’re out an about and she eats it all!
