These soft beef meatballs smothered in a rich mushroom gravy are a hearty and comforting meal that's great for any event. As a dinner, serve it over mashed potatoes or pasta.
Ingredients: 1 lb ground beef. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1 egg. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. 2 tablespoons olive oil. 8 oz mushrooms, sliced. 2 cloves garlic, minced. 2 cups beef broth. 1/2 cup heavy cream. 2 tablespoons all-purpose flour. Fresh parsley for garnish.
Instructions: Put breadcrumbs, egg, garlic powder, onion powder, salt, and pepper in a bowl. Add the ground beef and mix it all together. Mix everything together well. Form the mixture into meatballs that are about an inch across. Warm up a big pan with olive oil over medium-low heat. For about 8 to 10 minutes, or until the meatballs are browned on all sides, add them to the pan. Take it out of the pan and set it aside. Put minced garlic and sliced mushrooms in the same pan. It will take about 5 minutes of cooking until the mushrooms are golden brown and the garlic smells good. Add the flour to the mushrooms and garlic and stir them around all the time for about one minute. Add the beef broth slowly while stirring all the time to avoid lumps. Turn the heat down to low and let the sauce cook for about 5 minutes, until it gets thick. Add the heavy cream and mix it in. Then put the meatballs back in the pan. Let it cook on low heat for five to seven more minutes, or until the meatballs are done and the sauce gets thicker. Before serving, sprinkle with fresh parsley.
