how many zucchini can you fit inside a smoothie without tasting them? we shall find out.
just about every weekday morning, I make a smoothie for Dave and myself for breakfast and with the zucchini really coming in this week, I've started to add one to the smoothie.
but this morning, I was feeling bold and added two. I'm happy to say that honestly, I can't taste it with the cherry berry mix, a banana (basically half a banana each), honey, lemon juice, and vanilla protein powder to mask it. I'm thinking I'm going to make a chocolate cake with more of it -or- zucchini bread later, because Dave will be at a car event this evening, so either I'm on my own for dinner or I'll make something a little later than usual.
one thing that's helping with not being totally overwhelmed by zucchini has been that I'm not letting them get big in the garden, which helps a lot, but I'm also trying to use them in ways other than just eating straight up zucchini, because Dave isn't a huge fan of it straight up. he doesn't want to have the same vegetable so many times each week, which is funny in some ways because we love broccoli and cauliflower, so sometimes we'll eat those multiple times a week, but I get that.
I think as long as I make sure that I'm incorporating whatever I pick from the garden into different recipes, instead of using them straight up as the vegetable side themselves, we should be alright and he probably won't say a whole lot about it.
I'm getting back to running after a few weeks of inconsistency, and I have to say: it feels so much better, even though waking up early af sucksssss
Sunday prep- couples mason jar salads. Two * three different salads. Prep was inefficient if not filled with love. 💗💖💕 Don't know what we like yet. And I'm not making six salads just to find out they all tastes like trash.
To be honest- I'm actually pretty excited for these salads. There's a sweet fruit kale salad with a maple lime dressing that I can barely wait for. A Mexican inspired salad and I forgot the avocados. And one with a peanut lime dressing and some random veggies from my fridge. My lab partner is ready to fuck with that dressing. Salads adapted from below:

Also made six pumpkin overnight oats jars. Lined up all the jars and moved them across the scale, one at a time, measuring the things I'm adding. Turns out my measuring cups are definitely off from the weight! But did I track any of those things? Absolutely not. But maybe next time.
Next prep is on Wednesday night. But I could start on Tuesday after the gym if I'm not too tired.
Reflection: Having prepped meals in my fridge thrills me. It's an investment in my health and my husband's health. It's a good example for my kiddo. And it's a kindness for my future self. I am grateful for the work that I've put in to believe that I deserve health and nourishing foods. For so long- I settled for crap food that has destroyed my body.
We had a busy weekend with two trips across town and multiple friend hangouts. I don't feel like I did much. It was soothing to cut up a cucumber from the farm (I have so much privilege) or dance around to nineties music will I cleaned dishes. The pace felt slow and right and full of joy. Maybe most preps won't be like this. But I'm grateful for today's.
