Vegan Cheezits
The thing about Cheezits is... well, I don’t know. But I can eat half a box absentmindedly while watching a movie. They’re just so cheesy and salty...
With a name like “Cheezits” it’s obvious the key ingredient is cheese. That doesn’t bode well for my vegan self so I decided I needed to figure out a vegan version of this asap. I’ll admit, initially I wanted to make them healthy and sub in nutritional yeast for the cheese. I’m sure there is a recipe I could make where that works well but I just couldn’t get the memory of store-bought vegan cheezits out of my mouth. Blech. I was not and am not a fan of it.
I ditched the healthy route because, hey, vegans can eat junk food, too! I used Miyoko’s vegan cheddar cheese shreds with earth balance unsalted vegan butter mixed with some flour, salt, and spices aaaaaaaaaand that’s it! It’s just too simple to mess up.
If you’re looking for a fun experiment then look no further. This is the recipe for you. Would I make these on a consistent basis? Probably. I got pretty good at cutting the squares out and “decorating” them. I most likely would not decorate them if I weren’t taking a picture, though, because that takes some time.
Would I suggest this to someone who is on the go 24/7? Definitely not unless it’s just for fun. This is time consuming and if you don’t have the time to spare, go buy the box. It’ll save you time and money because vegan cheese shreds are not cheap. But I would still suggest trying this because it’s satisfying to make your own crackers just to tell people, “Oh, these? Yeah, I made them. I know, I’m sooo fancy.” I jest, but you can actually say it, haha.
The next time I make this (which will be very soon because my sister finished all of the crackers) I will try making this with all purpose flour exclusively and a cheaper vegan shredded cheese. Miyoko’s is great and all but, damn. $6 for 8 oz is a bit too high for me. Also, I really did want to try making this without store-bought vegan butter and use coconut oil instead but I just couldn’t bring myself to do it. I was too scared of a coconut-y aftertaste. Maybe I can try it in a smaller batch when I do eventually try to make these a little healthier. We’ll see.
