Ingredients: 2 cups leftover mashed potatoes. 1/2 cup shredded cheddar cheese. 1/4 cup chopped green onions. 1/4 cup all-purpose flour. 1 large egg, beaten. Salt and pepper to taste. 2 tablespoons vegetable oil, for frying.
Instructions: In a mixing bowl, combine mashed potatoes, shredded cheddar cheese, chopped green onions, all-purpose flour, beaten egg, salt, and pepper. Mix until well combined. Divide the mixture into equal portions and shape them into patties. Heat vegetable oil in a skillet over medium heat. Fry the potato patties until they are golden brown and crispy on both sides, about 3-4 minutes per side. Transfer the cooked potato cakes to a plate lined with paper towels to drain excess oil.
