Keto / LCHF Bread
Today I made this bread for the second time, but I tweaked the recipe, because I didn't really like the hazelnut/almond taste in it the last time. You can check out the original recipe on this Swedish website.
90g sunflower seeds
90g sesame seeds
105g of each golden flaxseed and "normal" flaxseed
50g psyllium husks
1 1/2 teaspoons salt
2 teaspoons baking powder
1 tablespoon seasoning (I used cumin and some herbes de Provence)
50g melted butter
250g quark (see below for list of possible substitutes)
100g creme fraiche
6 eggs
1. Preheat the oven to 175°C or 350°F
2. Grind sunflower seeds, sesame seeds and flaxseed until it has a flour-like consistency
3. Add all the other ingredients, mix it all together
4. Put it into a baking tin with baking parchment. You can spinkle some sunflower seeds/sesame seeds/flaxseeds on top
5. Bake for 75 minutes
Quark substitutes: Quark has a rather firm consistency and not too distinctive taste. I looked at several recipes online and think that a mixture of cream cheese and either greek jogurt, creme fraiche or sour creme. Cottage cheese might also work as a subsitute. I haven't tried it out myself, but I will the next time I make it.
