These S'mores Cupcakes are a delightful treat that combines all the flavors of a classic campfire s'more in a cupcake form. The graham cracker crust, moist chocolate chip marshmallow cake, and rich chocolate ganache make for a perfect dessert for any occasion.
Ingredients: 1 1/2 cups graham cracker crumbs. 1/2 cup unsalted butter, melted. 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1 cup whole milk. 1/2 cup mini chocolate chips. 1/2 cup mini marshmallows. 1/2 cup crushed graham crackers for garnish. 1/2 cup chocolate ganache for topping.
Instructions: Warm up the oven to 350F 175C and put cupcake liners in a muffin tin. Put the graham cracker crumbs and melted butter in a bowl and mix them together. Make sure the crumbs are covered in butter all over. To make the crust, press a spoonful of the graham cracker mix into the bottom of each cupcake liner. Mix the flour, baking powder, baking soda, and salt together in a different bowl. Spread the softened butter and sugar out in a separate large bowl. Beat them together until they are light and fluffy. One egg at a time, making sure to mix well after each addition. Add the vanilla extract and mix well. Add the dry ingredients mixture and the milk one at a time, starting with the dry ingredients and ending with them. Don't mix any further than that. Cut up the chocolate chips and marshmallows and mix them in. Place an even amount of cupcake batter in each liner on top of the graham cracker crust. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. After the cupcakes have cooled in the pan for a few minutes, move them to a wire rack to cool all the way down. After the cupcakes are cool, cover them with chocolate ganache and put crushed graham crackers on top. Have fun with your tasty S'mores cupcakes!
