I didn’t want to look like a tagalong, but yes, I also have a sourdough starter working. Her name is Ruby, and she’s a combo of pumpernickel and AP flours. We have haven’t had an “outside” meal since sometime in mid-February, and Mike and I have been jonesing for pizza. Seriously. So, with Ruby’s first discard, I made pizza dough. I don’t know if it’s because it’s been such a long time, or what, but it was so good! While I was at the macellaio (butcher) the netted bundles of meat picqued my interest. I saw pancetta encasing chicken that had been stuffed (ripieni) with a ground beef mixture. As we all know, anything wrapped in pancetta has got to be good. I bought and brought it home and followed directions given to me. I baked it and within 40 minutes it transformed into this dark brown crackly main course. Stefano sliced the loaf, what a delightful display of the meats. Stefano and I ate with delight. Impromptu sheet pan dinner! Boneless, skinless chicken breast, asparagus, and yellow squash, drizzled w/herb-infused olive oil, sprinkled w/sea salt, black pepper, lemon zest, and smoked paprika. I read a trick about freezing the cabbage whole, then thawing it, as an alternative to steaming it to separate the individual leaves for stuffed cabbage. Let’s see how the experiment works out!
