- 1/2 cup English cucumber, diced.
- 1/2 cup red bell pepper, chopped.
- 1/2 cup carrot, julienned.
- 1/4 cup green onion, sliced.
- 1/4 cup shelled pumpkin seeds.
Add all ingredients to a bowl and prepare dressing.

Maple Vinaigrette Ingredients:
- 1/4 cup extra virgin olive oil.
- 1/4 cup rice vinegar.
- 1/4 cup coconut aminos (sub low sodium soy sauce).
