Without refined sugar or grains, these Paleo Caramel Date Bars are a delightful treat that is sweet and satisfying. When following a Paleo diet, they are the ideal dessert or snack.
Ingredients: 1 cup Medjool dates, pitted. 1/2 cup almond butter. 1/4 cup raw honey. 1/4 cup coconut oil. 1/2 cup shredded coconut. 1/2 cup chopped nuts e.g., almonds, walnuts. 1/4 cup unsweetened cocoa powder. 1/2 tsp vanilla extract. Pinch of sea salt.
Instructions: The pitted Medjool dates, almond butter, raw honey, and coconut oil should all be combined in a food processor. Blend until smooth, similar to the consistency of caramel. Incorporate the shredded coconut, chopped nuts, vanilla extract, unsweetened cocoa powder, and a small amount of sea salt into the blend. Pulse until thoroughly mixed. Apply parchment paper to a square baking dish, then level out the mixture into the dish. After putting the dish in the fridge, give it at least two hours to set.
