Ingredients: 2 cups cooked black beans. 2 cups cooked rice. 1 cup corn kernels cooked or canned. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/4 cup chopped cilantro. 2 tablespoons lime juice. 1 teaspoon cumin powder. 1 teaspoon chili powder. Salt and pepper to taste. Tortillas for wrapping.
Instructions: In a large bowl, combine black beans, rice, corn, tomatoes, red onion, and cilantro. In a small bowl, whisk together lime juice, cumin powder, chili powder, salt, and pepper.
